Who can guess the secret ingredient in these brownies?

I’m not good at keeping my own secrets. Zucchini! 🥒

These vegan zucchini brownies hit the SPOT for that sweet craving and sneaks in veggies aswell.

These are chocolaty, fudgey, and moist and the zucchini is undetectable! 😍

DRY INGREDIENTS:

3/4 cups coconut sugar

1 1/2 cups rolled oats, ground into flour

1/2 cup semi sweet chocolate chips

1/2 cup cocoa powder

1 tsp baking powder

1/4 tsp baking soda

1/3 tsp salt

WET INGREDIENTS:

1 1/4 cups shredded zucchini (1 medium sized zucchini)

1/2 cup nut butter of choice (I used natural peanut)

1/4 cup plant based milk (I used almond)

1 tsp vanilla extract

DIRECTIONS:

Line a loaf pan with parchment paper and set oven to 360F

Process all dry ingredients (except chocolate chips)

Add all wet ingredients and blend until batter is smooth

Add chocolate chips and mix with spoon

Pour batter into loaf pan and bake for 35 minutes.

Let brownies cool completely before cutting into bite sized pieces.

Store in fridge covered, or freeze for later.
